Caramel Apple Pancake Cake

Growing up, my Dad’s go to dessert to serve me was stewed caramel apples over vanilla 🍦. This is my updated version of his classic, using @krusteaz Buttermilk Pancake Mix. This dish deserves a spot at any holiday table 💫.

What you need

cup milk

tsp coarse sea salt

vanilla ice cream

tsp cinnamon powder

tbsp vanilla

cup pancake mix

cup granulated sugar

oz butter
egg
Instructions
1. In a medium-sized skillet, combine butter, sugar and salt. Allow to melt over medium to medium-high heat. Mixture will begin to slightly bubble ~1-2 minutes. Place your apples in the butter sugar mixture and allow the apples to cook and caramelize for about 12-15 minutes, stir the apples every few minutes to cook evenly. Syrup should thicken and turn a light amber color. 2. While the apples are cooking, prepare the cake batter. In a bowl, add the mix, cinnamon, vanilla, milk, and egg. Whisk and until just blended. Do not overmix. Let the batter stand for at least 2 minutes. 3. Pour batter into a greased 10” cast iron skillet, then arrange apples on top of batter. Bake in a 375 degree oven for 10 minutes. 4. Remove cake from oven, and pour caramel syrup over top of the cake. Bake for an additional 15 minutes, or until the cake is just cooked through.View original recipe
